Zabaione

Ingredients:
Equal weight sugar and egg yolks (75g of each)
3-5 tablespoons Masala (to taste)
Berries – Strawberry, blueberry and blackberry
Meringue made using the pavlova recipe, crumbled

Method:
1. add egg yolks and sugar and mix with a electric mixer until colour changes

2. Over a warm water bath (do not boil), stir until it thickens and add the marsala to taste

3. Wait for the Zabaione to cool, and mix when you are ready to serve over berry and Meringue
