Vodka Pasta

Ingredients: (2 serves)

1/4 onion
2 cloves garlic
1/4 cup tomato paste
3/4 cup thickened cream
90mls vodka
1/2 cup parmesan or grana padano
Chilli flakes (optional)
Butter and oil to saute
Cooked pasta for 2 (to serve) – save some pasta water

Method:

  1. using a food processor, finely dice the onion and garlic
  2. Sauté onions and garlic in butter and oil
  3. add in tomato paste and let it cook for a minute
  4. Add in cream and chilli flakes. Stir in vodka once combined

  5. cook for 4-5 mins until thickened. Add in pasta, a few spoonfuls of pasta water and cheese. Mix well
