A great side to serve at BBQs
Ingredients:
12 bamboo skewers
2 Zucchinis
1 large block Haloumi
1 packet cherry tomatoes – mixed variety
1 Capsicum
1 lime – cut in half
Method:
- Soak the skewers in water to stop them from burning
- Cut up the zucchini, capsicum and haloumi into small piece
- Thread the veggies onto skewers – you can mix it up however you like but I go with zucchini first then haloumi, 1 cherry tomato then capsicum
- Place the skewers onto a preheated barbecue or grill -medium heat. Squeeze half the lime onto the top and season with salt and pepper
- Cook for 5 -7 minutes until it is browned on one side. turn all the skewers over, squeeze the 2nd half of the lime on top and season with salt and pepper.
- Cook for a further 5 minutes and serve immediately
