Tomato and Chicken Pasta sauce

Tomatoes
Chicken thighs – cut into pieces
Soy sauce
Sugar
Tomato Sauce
Pasta to serve

  1. Marinade the chicken pieces in soy and sugar

  2. Cut an X into the bottom of the tomatoes
  3. blanch with boiling water and peel the skin off. Dice

  4. Cook the chicken in a pan and remove from pan
  5. using the same pan, add in diced tomatoes with a small amount of water

  6. Cook until soft and add in some tomato sauce

  7. once reduced, add chicken back in. Toss in cooked pasta and serve
