Sweet Potato and coconut soup

Perfect for a cold winters day. You can also leave out the bacon to make it vegetarian

Ingredients:

1kg sweet potatoes – diced
1/4 cup maple syrup
6 rashes bacon – diced
4 cups chicken stock
3-4 sprigs of thyme
1 onion – finely chopped
3 cloves garlic
150ml coconut milk
Crusty bread or croutons- Toasted – to serve

Method:

  1. In a large pot, cook bacon pieces until firm and crunchy – remove from heat and set aside

  2. In the same pot, add in onion and garlic and cook til soft

  3. Toss sweet potato pieces in maple syrup to cover. Add to the pot

  4. Stir in chicken stock and add in thyme sprigs

  5. Bring to a boil and then cover and cook for 20-25 minutes until potatoes are soft

  6. Blend the soup until smooth

  7. Stir in coconut milk (if you want it creamier, you can also add 100ml of pure cream)

  8. spoon into bowls and add bacon pieces. Serve with crusty bread
