Perfect for a cold winters day. You can also leave out the bacon to make it vegetarian
Ingredients:
1kg sweet potatoes – diced
1/4 cup maple syrup
6 rashes bacon – diced
4 cups chicken stock
3-4 sprigs of thyme
1 onion – finely chopped
3 cloves garlic
150ml coconut milk
Crusty bread or croutons- Toasted – to serve
Method:
- In a large pot, cook bacon pieces until firm and crunchy – remove from heat and set aside
- In the same pot, add in onion and garlic and cook til soft
- Toss sweet potato pieces in maple syrup to cover. Add to the pot
- Stir in chicken stock and add in thyme sprigs
- Bring to a boil and then cover and cook for 20-25 minutes until potatoes are soft
- Blend the soup until smooth
- Stir in coconut milk (if you want it creamier, you can also add 100ml of pure cream)
- spoon into bowls and add bacon pieces. Serve with crusty bread
