750g marscapone
1/2 cup caster sugar
5 eggs, separated
Zest of 1/2 lemon
1 teaspoon vanilla
4 punnets strawberries (about 1kg)
1 more punnet of strawberries for decoration
3/4 cup sugar
Pavesini biscuits – 2 big packs or lady finger biscuits
600ml cream – whipped
- beat the egg whites til firm and peaks form
- beat egg yolks, 1/2 cup sugar, vanilla, lemon zest and marscapone. Fold in egg whites
- in a blender, blitz 4 punnets of strawberries with 3/4 cups of sugar to make strawberry sauce
- dip biscuits quickly into the strawberry sauce and line a tray
- cover with marscapone mix and drizzle with strawberry sauce.
- Add a thin layer of whipped cream in between the layers
- repeat til you reach almost the top
- add a thin layer of whipped cream on top
- slice the remaining strawberries and cover the top
- Refrigerate overnight
Works also with mango instead of strawberry
