Strawberry/Mango Tiramisu

750g marscapone
1/2 cup caster sugar
5 eggs, separated
Zest of 1/2 lemon
1 teaspoon vanilla
4 punnets strawberries (about 1kg)
1 more punnet of strawberries for decoration
3/4 cup sugar
Pavesini biscuits – 2 big packs or lady finger biscuits
600ml cream – whipped

  1. beat the egg whites til firm and peaks form
  2. beat egg yolks, 1/2 cup sugar, vanilla, lemon zest and marscapone. Fold in egg whites
  3. in a blender, blitz 4 punnets of strawberries with 3/4 cups of sugar to make strawberry sauce
  4. dip biscuits quickly into the strawberry sauce and line a tray
  5. cover with marscapone mix and drizzle with strawberry sauce.
  6. Add a thin layer of whipped cream in between the layers
  7. repeat til you reach almost the top
  8. add a thin layer of whipped cream on top
  9. slice the remaining strawberries and cover the top
  10. Refrigerate overnight

Works also with mango instead of strawberry
