Steak tartare

Ingredients:
– tartare quality steak
– red onion – finely diced
– spring onion – finely diced
– dijon mustard
– egg yolk

Method:
1. use a food processor to mince beef
2. mix in onion, spring onion, olive oil and dijon mustard. Season to taste
3. top with egg yolk
4. serve with crisp bread
