Slow cooker chicken/pulled pork/Beef nachos

I use this recipe when I have leftover pulled chicken or pork. Or if you don’t have any leftovers, you can just make it with fresh mince beef

Ingredients

Tortilla chips
2 cups leftover pulled chicken or pork
OR
500 grams minced beef
1 can black beans – drained
1 can taco sauce
1 small can of corn kernals – drained (if you are using leftover pulled chicken it already has corn in it)
mozzarella cheese
sour cream
avocado – mashed

Method:

  1. Preheat oven to 180 degrees
  2. Place tortilla chips into a bowl

  3. If you are using minced beef, heat some oil in a pan and brown the meat
  4. Pour in taco sauce, black beans and corn

  5. once it starts to simmer, put in meat (ignore this if you are using beef)

  6. Mix well and bring to a simmer

  7. spoon some of the mixture on top of the tortilla chips (up to you how much)

  8. top with mozzarella cheese. Once again, up to you how much you want to use. I use about 1 handful

  9. Put in the oven until the cheese melts – about 4-5 minutes

  10. Top with sour cream and avocado. Serve
