I use this recipe when I have leftover pulled chicken or pork. Or if you don’t have any leftovers, you can just make it with fresh mince beef
Ingredients
Tortilla chips
2 cups leftover pulled chicken or pork
OR
500 grams minced beef
1 can black beans – drained
1 can taco sauce
1 small can of corn kernals – drained (if you are using leftover pulled chicken it already has corn in it)
mozzarella cheese
sour cream
avocado – mashed
Method:
- Preheat oven to 180 degrees
- Place tortilla chips into a bowl
- If you are using minced beef, heat some oil in a pan and brown the meat
- Pour in taco sauce, black beans and corn
- once it starts to simmer, put in meat (ignore this if you are using beef)
- Mix well and bring to a simmer
- spoon some of the mixture on top of the tortilla chips (up to you how much)
- top with mozzarella cheese. Once again, up to you how much you want to use. I use about 1 handful
- Put in the oven until the cheese melts – about 4-5 minutes
- Top with sour cream and avocado. Serve
