Shortbread Cookies

Ingredients:

  • 150g unsalted butter, softened
  • 3/4 cup caster sugar
  • 2 teaspoons vanilla extract (concentrated)
  • 1 egg
  • 2 cups plain flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method:

  1. Using an electric mixer, beat butter, sugar and vanilla together
  2. add egg and beat until combined
  3. add sifter flour, baking powder and salt into the mixture
  4. Shape into a disk, wrap with baking paper and refrigerate for 15-30 mins
  5. Preheat oven to 190 degrees
  6. Roll dough out between sheets of baking paper until 5mm thick.
  7. Cut into preferred shapes and place on an oven tray lined with baking paper
  8. Bake for 12 minutes or until light golden brown. Ensure they are completely cool before decorating with icing
