Ingredients:
- 150g unsalted butter, softened
 - 3/4 cup caster sugar
 - 2 teaspoons vanilla extract (concentrated)
 - 1 egg
 - 2 cups plain flour
 - 1/2 teaspoon baking powder
 - 1/4 teaspoon salt
 
Method:
- Using an electric mixer, beat butter, sugar and vanilla together
 - add egg and beat until combined
 - add sifter flour, baking powder and salt into the mixture
 - Shape into a disk, wrap with baking paper and refrigerate for 15-30 mins

 - Preheat oven to 190 degrees
 - Roll dough out between sheets of baking paper until 5mm thick. 

 - Cut into preferred shapes and place on an oven tray lined with baking paper

 - Bake for 12 minutes or until light golden brown. Ensure they are completely cool before decorating with icing
