Shakshuka

1/2 red onion
1/2 capsicum
2 cloves garlic – diced
1 chorizo sausage – cut
1 tin diced tomato
1 teaspoon paprika
1 teaspoon cumin
4 eggs
parsley

  1. preheat oven to 180
  2. in a cast iron pan, cook onion, caps, garlic and chorizo in oil until soft
  3. add in tinned tomato, cumin and paprika until bubbling
  4. Turn off the heat, and create 4 holes in the sauce. Put in eggs
  5. put into oven for 7 minutes and top with parsley to serve
