Roasted tomato pasta sauce

Preheat oven to 180 fan forced (or 200 no fan)
Toss tomato, brown onion and garlic in olive oil, salt, pepper and dried basil
Bake until tomatoes are roasted and soft (around 45 mins)

Peel the skin off the tomatoes and blitz in a food processor

Keep the oil from the roasting pan, add to a saucepan and reduce the sauce

Serve with fresh basil and pasta
