Ingredients
Pumpkin cut into pieces
1 small sweet potatoes cut into pieces
1 onion
1L Chicken stock
250ml Cream
Method:
- Preheat oven to 180
- mix pumpkin and sweet potatoes in olive oil and salt
- Bake for 30 mins until soft and tops are slightly charred
- Cook onion in pot in olive oil
- add in pumpkin/sweet potatoes and 1L of chicken stock (add more if needed)
- bring to boil and blend with a stick blender
- Reduce until thick and add in cream
