Roasted Pumpkin Soup

Ingredients
Pumpkin cut into pieces
1 small sweet potatoes cut into pieces
1 onion
1L Chicken stock
250ml Cream

Method:

  1. Preheat oven to 180
  2. mix pumpkin and sweet potatoes in olive oil and salt
  3. Bake for 30 mins until soft and tops are slightly charred
  4. Cook onion in pot in olive oil
  5. add in pumpkin/sweet potatoes and 1L of chicken stock (add more if needed)
  6. bring to boil and blend with a stick blender
  7. Reduce until thick and add in cream
