Great tasty recipe for a weeknight dinner. Serve with garlic bread, salads or my potato puree
Ingredients:
1 rack of lamb chop
3-4 cloves of garlic – crushed
salt and pepper
1/4 cup of oil
1-2 sprigs of rosemary
mint jelly (to serve)
Method:
- Preheat oven to 180 degrees
- In a bowl, mix salt, pepper, oil and garlic. Spread it all over the lamb on both sides. (if you want to be lazy you can also just spread salt, pepper and garlic on the lamb then pour the oil on the top)
- Put 1 sprig of rosemary under the lamb and 1 sprig on top
- Roast it in the oven for 30-45 minutes (Depending on how well done you want it)
- Take the lamb out and discard the rosemary
- Cut the lamb up into individual lamb chops and serve. You can top it with some pepper if you want
