Ingredients:
– 400G ricotta
– 1 egg yolk
– short crust pastry
– 80g icing sugar
– 150g dark chocolate chips
Method:
1. preheat oven to 180 degrees
2. Using an electric mixer, mix ricotta, yolk and icing sugar together until smooth
3. Mix in chocolate chips until just combined
3. line a tin with the short crust pasty
4. pour in ricotta mixture and decorate the top with left over pastry if you wish
5. Bake in the oven for 30-40 minutes until pastry is cooked
