You can also just use this as steak instead of roasting. If so, just cut up the beef to the size you want before marinading and cook on the grill
Ingredients:
1kg beef scotch fillet
Black pepper
1 cup Red wine (Shiraz)
1 tablespoon wholegrain mustard
2 garlic cloves – crushed
2 bay leaves
2 red onions – sliced
Method:
- Pat dry the beef with a paper towel and rub with black pepper
- Put the beef in a large zip lock bag (you can use a bowl if you dont have one) and add in onions
- In a bowl, mix red wine, mustard, garlic and mix well. Pour into the bag and add bay leaves
- Shake the bag to make sure all the beef is covered with the mixture and refrigerate overnight
- When you are ready to cook, Preheat the oven to 200 degrees and melt some butter in a pan
- Place beef on the hot pan and brown all the sides (about 5 minutes)
- Take the onions out and put them into a roasting pan or dish
- Place the beef on top and put it in the oven for 1 hour (this is for medium rare – out it in longer if you prefer it well done)
- Take it out of the oven and cover with foil for 15 minutes (or until you are ready to serve)
- Cut up and serve with sides
