Pumpkin and spinach salad

Ingredients:

1kg butternut pumpkin – diced
1/2 cup pumpkin seeds
1/2 block haloumi – diced
50g bacon – diced (optional)
200g spinach – rinced
1/2 reg capsicum – diced

Method:

  1. preheat an oven to 180 degrees
  2. Put pumpkin into an oven tray. Mix with oil, salt and pepper. Bake for 20minutes or until soft

  3. In a pan, grill haloumi and bacon

  4. Put spinach in a bowl and mix in capsicum

  5. add in cooked pumpkin

  6. Top with haloumi, bacon and pumpkin seeds
