This is a great recipe for leftover pulled pork. The pork stock you have left over works wonders! If you do not have any stock left, you can use Beef stock
Ingredients:
1 onion – chopped
2 cloves garlic – crushed
1/2 cup red wine – Shiraz
1 can diced tomatoes (or fresh tomatoes work too)
2 tablespoons tomato paste
1/2 cup pork stock (leftover from pulled pork)
300g leftover pulled pork
1/4 cup cream
cooked pasta – to serve
Method:
- Heat some oil in a pan and cook the onions and garlic
- Add in pork stock (should be jelly like) and cook until it becomes liquid
- Add in canned tomatoes, red wine and tomato paste
- Stir in pork
- Mix well and bring to a simmer
- Stir in cream and bring it to a simmer – season with salt and pepper
- Serve over pasta
