Pulled pork pasta

This is a great recipe for leftover pulled pork. The pork stock you have left over works wonders! If you do not have any stock left, you can use Beef stock

Ingredients:

1 onion – chopped
2 cloves garlic – crushed
1/2 cup red wine – Shiraz
1 can diced tomatoes (or fresh tomatoes work too)
2 tablespoons tomato paste
1/2 cup pork stock (leftover from pulled pork)
300g leftover pulled pork
1/4 cup cream
cooked pasta – to serve

Method:

  1. Heat some oil in a pan and cook the onions and garlic

  2. Add in pork stock (should be jelly like) and cook until it becomes liquid

  3. Add in canned tomatoes, red wine and tomato paste

  4. Stir in pork

  5. Mix well and bring to a simmer

  6. Stir in cream and bring it to a simmer – season with salt and pepper

  7. Serve over pasta
