Another multi-meal recipe. I will put up the recipe for the leftovers over the next few days 🙂

Serves: 6-7
Ingredients:
450g of salsa
Juice of 2 limes
1 package taco seasoning
4 tablespoons coriander – chopped
1kgs of chicken breast
125g of corn kernals
Tortilla wraps
Cabbage
Sour cream
Avocado – crushed
mozzarella cheese
Method:
- In a slow cooker, mix salsa, lime juice, taco seasoning and coriander

 - Season the chicken with salt and pepper to taste

 - Mix the chicken into the slow cooker. Make sure the is sauce over the chicken as well

 - Cook on LOW for 6-8 hours
 - Pull out the chicken only from the slow cooker

 - With 2 forks, shred the chicken into small strips

 - Mix the chicken back into the slow cooker and add corn kernals. Mix well

 - Scoop the mixture into a bowl. If you are letting everyone make their own tacos, serve everything individually. Otherwise just skip this step and go to 9

 - Heat up the tortillas according to the packet instructions and construct as you like. Personally, I do sour cream and avocado. Then cheese and lettuce and finally top with chicken


 - Wrap it how you like but this is how I wrap it:
