Ingredients:
100g spinach – rinsed and drained
2 figs – cut into quarters
1 cup diced rock melon
1/2 cup haloumi or Bocconcini
50g prosciutto – diced
Sweet balsamic vinegar for dressing
Method:
- in a bowl mix spinach, prosciutto, rockmelon and figs
- Add in haloumi or bocconcini
- Add in balsamic vinegar before serving
