Ingredients:
1-2 dozen prawns
150g butter
500ml fish stock
500ml water
2 cans crushed tomatoes
1 onion, diced
3 cloves garlic, crushed
Method:
- Separate prawn heads/shells from the meat
- In a pot, melt butter and some oil. Add in prawn heads/shells until they start to pop
- add in diced onion and garlic, cook til soft
- add in tomatoes, stock, water. Mix well then let it simmer (covered) for 20-30 minutes
- Strain out the solid parts and put liquid back into pot
- Add in prawn meat and cook until just cooked through
- Serve over cooked pasta, using prawn heads as garnish if you wish
