Prawn bisque

Ingredients:
1-2 dozen prawns
150g butter
500ml fish stock
500ml water
2 cans crushed tomatoes
1 onion, diced
3 cloves garlic, crushed

Method:

  1. Separate prawn heads/shells from the meat

  2. In a pot, melt butter and some oil. Add in prawn heads/shells until they start to pop

  3. add in diced onion and garlic, cook til soft

  4. add in tomatoes, stock, water. Mix well then let it simmer (covered) for 20-30 minutes

  5. Strain out the solid parts and put liquid back into pot

  6. Add in prawn meat and cook until just cooked through

  7. Serve over cooked pasta, using prawn heads as garnish if you wish
