Pork sausage Rigatoni

500g pork sausage (casing removed)
1 carrot, grated
1 onion, diced
3-4 cloves garlic, finely chopped
1 can of crushed tomatoes
50g butter
spinach
2 cups cooked rigatoni
cheese to serve

  1. heat up oil in a pan and cook onion and garlic
  2. add in sausage and carrot and cook sausage through
  3. add in tomatoes
  4. add spinach and butter and cook until spinach is just wilted
  5. add in rigatoni and serve
