Pok Pang (Peking Duck Pancakes)

Ingredients:
– 2 cup plain flour
– 3/4 cup boiling water
– 1 tablespoon sesame oil

Method:

  1. sift flour into bowl and pour in boiling water. Knead for 10 minutes until the mix is soft and smooth. Cover the dough and let set for 30 minutes
  2. cut into 10 separate pieces, covering the dough when it is not being used
  3. roll one into a pancake and apply sesame oil. Place another pancake on top and continue to roll out until they are about 17cm
  4. Fry in a pan until golden. Remove from heat and pull apart
  5. Serve immediately or steam to reheat
