Plum Pie

2 sheets short crust pastry
50g almond flakes – toasted
10 plums -destoned and quartered
50g butter
100g caster sugar
1 teaspoon cinnamon
1/2 teaspoon ground ginger
3 tablespoons corn flour

  1. Preheat the oven to 200 degrees
  2. line a pie tin with short crust pastry
  3. Place all other ingredients into a large bowl and stir adding more sugar if needed
  4. place mix into pie crust and cover with the other short crust pastry sheet. Poke some holes to let moisture escape
  5. Put into the fridge for 1 hour to chill
  6. preheat the oven to 200 degrees and put in a baking tray to warm up
  7. put pie on top of heated baking tray and bake in oven for 20 minutes
