2 sheets short crust pastry
50g almond flakes – toasted
10 plums -destoned and quartered
50g butter
100g caster sugar
1 teaspoon cinnamon
1/2 teaspoon ground ginger
3 tablespoons corn flour
- Preheat the oven to 200 degrees
- line a pie tin with short crust pastry
- Place all other ingredients into a large bowl and stir adding more sugar if needed
- place mix into pie crust and cover with the other short crust pastry sheet. Poke some holes to let moisture escape
- Put into the fridge for 1 hour to chill
- preheat the oven to 200 degrees and put in a baking tray to warm up
- put pie on top of heated baking tray and bake in oven for 20 minutes
