Pho

Ingredients:
– 2kg beef bones – ox tail or beef neck bones
– 2 large onions, halved
– ginger, sliced down the centre
– 10 star anise
– 4 cinnamon quills
– 4 cardamon pods
– 3 cloves
– 1.5 tablespoons coriander seeds
– rock sugar
– fish sauce to taste
– Rice noodles to serve
– thin slices of beef to serve

Method:

  1. Preheat an oven to 200 degrees. Place beef on an oven tray with a rack. Roast beef for 1 hour or until dark brown on top

  2. Toast all the spices. (cinnamon takes a little longer)

  3. Char the onions and ginger on the stovetop or BBQ

  4. Place the cooked beef bones, toasted spices, charred onions/ginger and rock sugar into a large pot and fill to the brim with water

  5. Cook for 6 hours. Season with fish sauce then continue to cook for another 2 hours

  6. Strain out the mixture leaving only the broth

  7. Cook noodles based on packet ingredients. Serve boiling hot soup over cooked noodles and raw beef slices
