Pavlova

A great way to use leftover egg whites

Ingredients:
3 egg whites
1/2 cup caster sugar
1 teaspoon corn flour
1/2 teaspoon vinegar (white)
1/2 teaspoon vanilla extract
300ml cream (whipped) and fruit to serve

Method:

  1. Preheat oven to 120 degrees
  2. Line a baking tray with foil and cover with butter
  3. With an electric mixer, mix egg whites until stiff peaks form
  4. add in sugar, 1 tablespoons at a time. Mix until the mixture is not gritty
  5. add in corn flour, vinegar and vanilla. Mix well
  6. spoon onto tray and bake in oven for 1.5 hours. Outside should be firm/crunchy

  7. remove from foil and allow to cool. Serve with cream and fruit
