A great way to use leftover egg whites
Ingredients:
3 egg whites
1/2 cup caster sugar
1 teaspoon corn flour
1/2 teaspoon vinegar (white)
1/2 teaspoon vanilla extract
300ml cream (whipped) and fruit to serve
Method:
- Preheat oven to 120 degrees
- Line a baking tray with foil and cover with butter
- With an electric mixer, mix egg whites until stiff peaks form
- add in sugar, 1 tablespoons at a time. Mix until the mixture is not gritty
- add in corn flour, vinegar and vanilla. Mix well
- spoon onto tray and bake in oven for 1.5 hours. Outside should be firm/crunchy
- remove from foil and allow to cool. Serve with cream and fruit
