Pastina – Italian Chicken noodle soup

Any small shaped pasta is fine. 2 examples below 🙂

Serves: 1

Ingredients 

1 Vegetable OR chicken stock cube (or you can just use 2 cups of chicken/vegetable stock)
2 cups water (if you are using stock cubes)
1 egg
1/2 cup small pasta
1 tablespoon butter
1/2 chicken thigh – diced
1/8 cup of Parmesan

Method:

  1. put stock cube and water (or just 2 cups stock) into a pot and over high heat. Bring to boil

  2. Once it is boiling, stir in pasta and butter  – mix well so it doesn’t stick together

  3. Cook it until the pasta is cooked and puffy (about 5-10 mins). Add in chicken pieces. Season with salt and pepper. You won’t need much salt because of the stock so I just use pepper

  4. In a bowl (or container if you are keeping it for later), beat eggs and Parmesan together

  5. Once the soup is boiling, pour it straight into the bowl/container and mix well
