This recipe works with pretty much any veggies. You can also use different noodles or take the meat out to make it vegetarian. I use the below satay sauce
Ingredients:
3 chicken thighs – cut into small slices
1 tablespoon corn flour
1 tablespoon sugar
3 tablespoons soy sauce
1 onion – sliced
3 cloves garlic – crushed
2-3 slices of ginger
Any veggies you like – I used baby corn, snow peas, carrot and capsicum
2 packets udon
3 tablespoons satay sauce
Method:
- in a bowl, marinade chicken with soy, corn flour and sugar
- Boil some water in a pot and cook udon until it just comes apart. Drain and set aside
- Heat up some oil in a fry pan. Cook onion, garlic and ginger
- toss in chicken until just browned
- toss in veggies and satay sauce – cook until soft
- add in udon and mix well so all the noodles are covered in satay sauce. Serve immediately
