Mushroom sauce (for steaks)

Ingredients:
– butter
– mushrooms
– eshallot (finely diced)
– thyme
– garlic
– chicken stock
– cream

Method:

  1. In a pan, melt butter with some oil. Toss in shallot and mushrooms and cook through
  2. add in garlic and cook through (dont burn)
  3. deglaze the pan with chicken stock. Add in cream and thyme
  4. Reduce until thick (about 30-40 mins). Add corn flour if needed
