Minestrone

2 rashers bacon
2 onions, diced
2 carrots, diced
2 celery stalks, diced
500g butternut pumpkin, diced
rosemary leaves
Sage
2 cans diced tomatoes
1 can borlotti beans
1.5L vegetable stock
1/2 cup Stelline (star pasta)
basil to serve

  1. Heat up oil and cook bacon, onion, carrot, celery and pumpkin until soft
  2. add tomatoes, stock, beans and herbs
  3. add in star pasta in the last 15 minutes
