Mexican style chicken and chorizo salad

Ingredients:

1 can black beans – rinsed and drained
1 small can of corn kernals
1/2 red onion – thinly sliced
1 avocado – diced
1 punnet cherry tomatoes – halved
2 chicken thigh fillets – diced
3 chorizo sausages – diced
1 packet taco seasoning
1/2 cup sour cream
3 sprigs coriander
juice of 1 lime

Method:

  1. in a food processor, put in sour cream, lime juice and coriander. Blend and place into the fridge

  2. Toss chicken in taco season. Cook on an oiled pan until chicken is cooked through. Add Chorizo and cook

  3. In a bowl, mix corn kernels, black beans, avocado and onion

  4. Top with cherry tomatoes and cooked meats

  5. Pour sour cream mix over the top and serve immediately
