Mexican bean soup

Ingredients:

1 onion – diced
1 carrot – diced
150g chorizo – diced
2 cans four bean mix
taco seasoning – 1 packet
2 cups Vegetable stock
tortilla strips (to serve)

Method:

  1. In a pan, heat up some oil and cook chorizo

  2. remove chorizo from heat (leaving the oil in the bottom of the pan) and put in onion, carrot and taco seasoning. Cook until soft

  3. Stir in vegetable stock and simmer for 5 minutes
  4. Rince beans and add to saucepan

  5. Bring to boil and simmer for a further 1-2 minutes. Add in chorizo and serve with tortilla chips
