Ingredients:
1 onion – diced
1 carrot – diced
150g chorizo – diced
2 cans four bean mix
taco seasoning – 1 packet
2 cups Vegetable stock
tortilla strips (to serve)
Method:
- In a pan, heat up some oil and cook chorizo

 - remove chorizo from heat (leaving the oil in the bottom of the pan) and put in onion, carrot and taco seasoning. Cook until soft
 
 - Stir in vegetable stock and simmer for 5 minutes
 - Rince beans and add to saucepan
 
 - Bring to boil and simmer for a further 1-2 minutes. Add in chorizo and serve with tortilla chips
