Meatballs

Great recipe I use for meatballs. I make a big batch and leave them in the freezer for a lazy weeknight dinner

Ingredients:

600g beef mince
1 egg
3/4 cup breadcrumbs
1 brown onion
100g bacon (rinds removed)
3 cloves garlic
1/3 cup BBQ sauce (smokey is good)
4-5 sprigs of chives

Method:

  1. Put onion, bacon, garlic and chives in a food processor and cut up. If you do not have a food processor you can just finely chop everything up

  2. Mix in egg and BBQ sauce

  3. Add beef and bread crumbs and blend well. Season with salt and pepper

  4. Roll meat into balls (about golf ball size)

  5. cover with cling wrap and freeze for about 30 minutes before cooking (and leave any other ones in the freezer for later)

  6. When you are ready to cook, preheat the oven to 180 degrees. You can also just grill these on a BBQ
  7. Put meatballs into the oven and cook for 20-25 minutes until the tops are a darker brown
