Great recipe I use for meatballs. I make a big batch and leave them in the freezer for a lazy weeknight dinner
Ingredients:
600g beef mince
1 egg
3/4 cup breadcrumbs
1 brown onion
100g bacon (rinds removed)
3 cloves garlic
1/3 cup BBQ sauce (smokey is good)
4-5 sprigs of chives
Method:
- Put onion, bacon, garlic and chives in a food processor and cut up. If you do not have a food processor you can just finely chop everything up
- Mix in egg and BBQ sauce
- Add beef and bread crumbs and blend well. Season with salt and pepper
- Roll meat into balls (about golf ball size)
- cover with cling wrap and freeze for about 30 minutes before cooking (and leave any other ones in the freezer for later)
- When you are ready to cook, preheat the oven to 180 degrees. You can also just grill these on a BBQ
- Put meatballs into the oven and cook for 20-25 minutes until the tops are a darker brown
- serve with salad or veggies
