Ingredients:
– 600g chicken tenderloins cut into pieces
– 1 large egg
– 2 tablespoons soy sauce
– 2 tablespoons white vinegar
– 1/2 cup corn flour
– oil to fry
Lemon sauce:
– 1 tablespoon oil
– 3 cloves minced garlic
– 1 teaspoon minced ginger
– 1/2 cup chicken stock
– 2 tablespoons soy sauce
– juice of 1 lemon
– 2 tablespoons sugar
– 2 tablespoons honey
– 2 teaspoons corn flour (dissolved)
Method:
1. Marinate chicken in egg, soy and vinegar for at least 30 minutes
2. pour chicken and marinade into corn starch and coat pieces
3. fry chicken in oil until golden and set aside
4. heat oil and saute the garlic and ginger.
5. add stock, soy sauce, lemon juice, sugar, honey and some salt. Wisk and simmer until sugar dissolves
6. add in corn flour mix to thicken sauce and toss cooked chicken back in
