Super simple recipe – great for a weeknight meal with some basic sides
Ingredients
chicken thigh or breast
1 lemon – 1 per breast/1 per 2 thighs
2 cloves of garlic per lemon
sprigs of rosemary – 1 per breast/1 per 2 thighs
Method
- pat down chicken with a paper towel and put in a bowl or zip lock bag
- Halve the lemon and squeeze the juice into the chicken. Add in garlic and rosemary
- Shake the bag/mix well and leave overnight in the fridge
- When you are ready to cook, preheat the oven to 180 degrees
- Take chicken out of the bag (leave the marinade) and put on a roasting dish. Season with salt and pepper and top with one of the sprigs of rosemary from the bag
- Roast in the oven – 30 minutes for chicken breast and about 20 minutes for thigh
