Lemon and Garlic Roast chicken

Super simple recipe – great for a weeknight meal with some basic sides

Ingredients

chicken thigh or breast
1 lemon – 1 per breast/1 per 2 thighs
2 cloves of garlic per lemon
sprigs of rosemary – 1 per breast/1 per 2 thighs

Method

  1. pat down chicken with a paper towel and put in a bowl or zip lock bag

  2. Halve the lemon and squeeze the juice into the chicken. Add in garlic and rosemary

  3. Shake the bag/mix well and leave overnight in the fridge
  4. When you are ready to cook, preheat the oven to 180 degrees
  5. Take chicken out of the bag (leave the marinade) and put on a roasting dish. Season with salt and pepper and top with one of the sprigs of rosemary from the bag

  6. Roast in the oven – 30 minutes for chicken breast and about 20 minutes for thigh
