Ingredients:
– 1 onion, diced
– 4-6 cloves garlic
– tinned whole tomatoes
– tomato paste
– beef stock
– minced beef or beef meatballs
– buffalo mozzarella
– sliced parmesan and shredded mozzarella
– 500g ricotta
– basil
– fresh lasagne sheets
- pre heat oven to 200 degrees
- Cook garlic cloves in oil until brown
- In a pan, heat oil and cook onion til soft
- add in tinned tomatoes, tomato paste, stock and some sugar. Cook til thick
- add in garlic and blend mixture with a stick blender
- divide the mixture and stir in ricotta to half the mix (mix semi-cooked mince or meatballs into the other half)
- Assemble the lasagne: lasagne sheet, mince mix, buffalo mozzarella, ricotta mix, then basil. Repeat until out of ingredients finishing with ricotta mix and basil.
- cover the top with sliced parmesan and shredded mozzarella and bake for 20-30 minutes until top is brown
