Lamb pie

Ingredients:
2 potatoes, peeled and diced
500g cauliflower, cut into small florets
2 carrots, grated
1 onion, finely diced
20g cornflour
40g tomato powder
500g lamb mince
5g porcini powder
100g butter
1 tablespoon white wine vinegar
1 tablespoon dijon mustard
1/4 cup milk

Method:

  1. Boil potatoes and cauliflower in salted water until soft then mash with 50g of melted butter and milk
  2. Put cornflour, tomato powder, white wine vinegar, mustard and 1 cup of water into a jug and stir until combined
  3. Heat oil in a pan and cook carrots and onions until soft
  4. add lamb mince and cook until browned
  5. add porcini powder
  6. stir in tomato and cornflour mixture and bring to simmer. Cook until liquid is absorbed
  7. Put lamb mix into an oven dish and top with mash.
  8. using a fork, rough up surface then top with the remaining 50g of butter (diced)
  9. put into oven until top is golden
