Ingredients:
2 potatoes, peeled and diced
500g cauliflower, cut into small florets
2 carrots, grated
1 onion, finely diced
20g cornflour
40g tomato powder
500g lamb mince
5g porcini powder
100g butter
1 tablespoon white wine vinegar
1 tablespoon dijon mustard
1/4 cup milk
Method:
- Boil potatoes and cauliflower in salted water until soft then mash with 50g of melted butter and milk
- Put cornflour, tomato powder, white wine vinegar, mustard and 1 cup of water into a jug and stir until combined
- Heat oil in a pan and cook carrots and onions until soft
- add lamb mince and cook until browned
- add porcini powder
- stir in tomato and cornflour mixture and bring to simmer. Cook until liquid is absorbed
- Put lamb mix into an oven dish and top with mash.
- using a fork, rough up surface then top with the remaining 50g of butter (diced)
- put into oven until top is golden
