Lamb and Beef Koobideh Kebabs

Serve with Persian rice and yogurt 

If you do not have a food processor, buy minced lamb and beef and finely chop everything

Ingredients

2 brown onions
300g lamb
300g sirloin steak
4 cloves garlic
1 egg
1/4 cup bread crumbs
2-3 sprigs of parsley
1 teaspoon turmeric
1 teaspoon paprika
1 pinch ground saffron

Method:

  1. in a food processor – finely chop up onion (or grate)

  2. Cover a strainer with a few pieces of paper towel and drain the onions for a few hours

  3. In a food processor, mince beef and lamb

  4. add in garlic, parsley, egg, turmeric, paprika and saffron. Mix well

  5. Add in the drained onion

  6. Move mixture to a bowl and stir in bread crumbs, season with salt and pepper

  7. cover a plate with baking paper. Roll the mixture into sausages

  8. Cover with cling wrap and leave overnight.
