Jooje Kebab – Persian Chicken Kebab

This is my absolute favourite! My best friend is Persian and the first time his family made this for me I became obsessed with it! Service with Persian rice, Lebanese bread and Persian yogurt

Ingredients 

1kg chicken diced – thigh or breast works
1/2 cup olive oil
2 large onions
2-3 limes
salt
pepper
1/4 teaspoon saffron
2 tablespoons greek yoghurt
Skewers
Any veggies you want to grill up – I use tomato and capsicum

Persian rice, Lebanese bread and Persian Yogurt – to Serve

Method:

  1. In a food processor, cut up onion so it is very fine (if you do not have a food processor, you can just grate the onion)

  2. Add in oil, salt, pepper and squeeze in lime juice from the limes. Mix til just combined

  3. add in saffron and yoghurt

  4. Mix well

  5. Cover the chicken completely in the sauce. I just use ziplock bags and shake but you can just use a large bowl. Make sure all the chicken pieces are covered in sauce

  6. Refrigerate over night or at least 8 hours
  7. Take chicken out from the fridge and put the pieces onto skewers

  8. Cut up and skewer any veggies you want to grill up

  9. use a brush and cover the veggies on both sides with leftover sauce

  10. On a BBQ or grill, cook skewer on a heated pan. I cook mine for about 3 minutes on each side

  11. Cook up any veggie skewers as well

  12. Serve with rice, yogurt and Lebanese bread
