This is my absolute favourite! My best friend is Persian and the first time his family made this for me I became obsessed with it! Service with Persian rice, Lebanese bread and Persian yogurt
Ingredients
1kg chicken diced – thigh or breast works
1/2 cup olive oil
2 large onions
2-3 limes
salt
pepper
1/4 teaspoon saffron
2 tablespoons greek yoghurt
Skewers
Any veggies you want to grill up – I use tomato and capsicum
Persian rice, Lebanese bread and Persian Yogurt – to Serve
Method:
- In a food processor, cut up onion so it is very fine (if you do not have a food processor, you can just grate the onion)
- Add in oil, salt, pepper and squeeze in lime juice from the limes. Mix til just combined
- add in saffron and yoghurt
- Mix well
- Cover the chicken completely in the sauce. I just use ziplock bags and shake but you can just use a large bowl. Make sure all the chicken pieces are covered in sauce
- Refrigerate over night or at least 8 hours
- Take chicken out from the fridge and put the pieces onto skewers
- Cut up and skewer any veggies you want to grill up
- use a brush and cover the veggies on both sides with leftover sauce
- On a BBQ or grill, cook skewer on a heated pan. I cook mine for about 3 minutes on each side
- Cook up any veggie skewers as well
- Serve with rice, yogurt and Lebanese bread
