Ingredients:
225g unsalted butter, melted
3/4 cup caster sugar
2 teaspoons vanilla extract
1 large egg
2.5 cups plain flour
1/4 teaspoon sea salt
Strawberry jam
Method:
- Preheat the oven to 180 degrees
 - add sugar to melted butter and mix on medium 

 - Add in eggs, vanilla and salt and mix til just combined

 - add in flour – 1 cup at a time until well incorporated

 - Mix for 304 minutes until smooth

 - Scoop batter out (1 heaped tablespoon) and roll into a smooth ball, then press into disc, using your thumb to indent the centre

 - Fill with Jam (approx 1/2 teaspoon). 

 - Bake for 10 minutes, turn the tray around and bake for a further 4 minutes. Cool on a wire rack
