Jam Drops

Ingredients:
225g unsalted butter, melted
3/4 cup caster sugar
2 teaspoons vanilla extract
1 large egg
2.5 cups plain flour
1/4 teaspoon sea salt
Strawberry jam

Method:

  1. Preheat the oven to 180 degrees
  2. add sugar to melted butter and mix on medium
  3. Add in eggs, vanilla and salt and mix til just combined
  4. add in flour – 1 cup at a time until well incorporated
  5. Mix for 304 minutes until smooth
  6. Scoop batter out (1 heaped tablespoon) and roll into a smooth ball, then press into disc, using your thumb to indent the centre
  7. Fill with Jam (approx 1/2 teaspoon).
  8. Bake for 10 minutes, turn the tray around and bake for a further 4 minutes. Cool on a wire rack
