My favourite cupcake recipe
Ingredients:
150g butter, melted
1.5 cups caster sugar
2 eggs
2 teaspoon vanilla extract
2.5 cups self-raising flour
1.25 cup milk
100g butter, softened (for icing)
1.5 cups icing sugar
1 tablespoons milk (for icing)
1 teaspoon vanilla extract (for icing)
Method:
- Preheat the oven to 190 degrees
- Beat melted butter and caster sugar with an electric mixer until smooth
- add eggs, milk and vanilla and mix until just combined
- Sift in flour and mix until smooth
- Spoon into cupcake cases – making sure they are only about 2/3 full
- Bake for 20 minutes
- Remove from baking tin and leave to cool on a wire rack
- To make icing the icing: beat the icing until pale and fluffy with an electric mixer. Add in icing sugar and mix well. Add in food colouring and vanilla. Mix until smooth
