Fluffy Vanilla Cupcakes

My favourite cupcake recipe

Ingredients:

150g butter, melted
1.5 cups caster sugar
2 eggs
2 teaspoon vanilla extract
2.5 cups self-raising flour
1.25 cup milk

100g butter, softened (for icing)
1.5 cups icing sugar
1 tablespoons milk (for icing)
1 teaspoon vanilla extract (for icing)

Method:

  1. Preheat the oven to 190 degrees
  2. Beat melted butter and caster sugar with an electric mixer until smooth
  3. add eggs, milk and vanilla and mix until just combined
  4. Sift in flour and mix until smooth
  5. Spoon into cupcake cases – making sure they are only about 2/3 full
  6. Bake for 20 minutes
  7. Remove from baking tin and leave to cool on a wire rack
  8. To make icing the icing: beat the icing until pale and fluffy with an electric mixer. Add in icing sugar and mix well. Add in food colouring and vanilla. Mix until smooth
