Ingredients:
8 tortillas
3 sprigs corriander
1 cup sour cream
juice of 1 lime
2 chicken breasts – finely diced
1 onion (red or brown is fine) – finely diced
1 capsicum – finely diced
2 packets taco seasoning (50g)
1 cup mozzarella cheese
1 avocado – mashed
1 tomato – finely diced
Method:
- In a food processor, blend coriander, sour cream and lime juice. Season with salt and pepper and set aside


 - Heat up some oil in a pan and cook onion until soft

 - Add in chicken

 - Stir in taco seasoning and mix well


 - Remove chicken/onion mixture from pan and put in capsicum

 - Cook until soft and turn off heat. Mix chicken and capsicum together

 - Fill half a tortilla with 1/2 a layer of cheese. Add chicken mixture on top then add another layer of cheese


 - Heat up a grill pan or BBQ (normal pan works too). Fold the tortillas up and put onto a dry, heated pan. Using the back of a spatula, push the tortillas down to flatten them.

 - Cook for 3 minutes on each side. Cut in half

 - Serve with sour cream mix, avocado and diced tomatoes
