This is another recipe I found online and altered myself. Advanced warning, they are quite rich!
Ingredients:
125g unsalted butter
125g dark chocolate
3 large eggs
1 cups white sugar
1/2 cup brown sugar
3/4 cup plain flour
1/4 cup cocoa powder
1 teaspoon vanilla extract
1/2 teaspoon sea salt flakes
1/2 cup dark chocolate chips
Method:
- Preheat the oven to 180 degrees (or 160 fan forced)
- Line a 20cm square pan with baking paper
- chop butter and dark chocolate into small pieces and place into a bowl
- Put the bowl into the microwave on LOW for 50 seconds. Take out and stir. If it hasn’t melted, put it back into the microwave on low at 20 second intervals mixing well in between
- In a large bowl, put in eggs, sugar, flour, salt, cocoa powder and vanilla extract. Mix with a spoon/spatula until just combined
- add in melted chocolate/butter mix. Beat with an electric beater for 2 minutes until well combined and the batter has thickened
- Add in chocolate chips and mix until just combined
- Pour mixture evenly into a brownie pan (using a spoon or scraper to spread it out evenly) and put it in the oven
- Bake for 30-35 minutes – when you put a skewer in the center it should come out clean
- Wait for it to cool for 10 minutes before taking out of the pan
