Ingredients:
1.5 cups milk
25g (3 tablespoons) corn flour
1 vanilla bean, cut length ways then again in half
3 egg yolks
1/3 cup caster sugar
6 filo sheets
50g butter, melted
Method:
1. Preheat oven to 180 degrees
2. in a bowl, dissolve corn flour with 50ml of milk
3. In a pan over low heat, put in milk, corn flour mix, vanilla bean, egg yolk and caster sugar. Whisk constantly until custard is thick – about 4 minutes
4. Remove from heat and discard vanilla beans
5. place a sheet of pastry down, brush with melted butter then put another sheet on top. Repeat with all 6 sheets.
6. Once the custard is cooled completely, place in a log shape in the middle of the pastry. Tuck the sides in and roll into a log. Brush with butter on top
7. Bake for 20 minutes or until pastry is golden
