Creamy Potato bake

Great recipe as a side dish. Works with sweet potato also

Ingredients:

4-5 potatoes – about 1kg
3 cloves garlic
3-4 sprigs of thyme
2 brown onions
1 cup milk
1/2 cup cream
salt and pepper
Mozzarella cheese

Method:

  1. Preheat the oven to 180 degrees
  2. peel and slice the potato into thin pieces

  3. In a food processor, put in garlic, onion and thyme and finely chop (you can also just finely chop by hand if you do not have a food processor)

  4. In a bowl, mix cream and milk. Stir well and season with salt and pepper

  5. Grease an oven safe dish and put a layer of potato down

  6. put a tablespoon of onion mix and spread well

  7. Top with 1/4 of the milk mixture

  8. Repeat the layers – finishing with milk mixture.
  9. Cover with foil and bake for 90 minutes. Take off the foil, top with some mozzarella cheese and bake for a further 10 minutes
