Great recipe as a side dish. Works with sweet potato also
Ingredients:
4-5 potatoes – about 1kg
3 cloves garlic
3-4 sprigs of thyme
2 brown onions
1 cup milk
1/2 cup cream
salt and pepper
Mozzarella cheese
Method:
- Preheat the oven to 180 degrees
- peel and slice the potato into thin pieces
- In a food processor, put in garlic, onion and thyme and finely chop (you can also just finely chop by hand if you do not have a food processor)
- In a bowl, mix cream and milk. Stir well and season with salt and pepper
- Grease an oven safe dish and put a layer of potato down
- put a tablespoon of onion mix and spread well
- Top with 1/4 of the milk mixture
- Repeat the layers – finishing with milk mixture.
- Cover with foil and bake for 90 minutes. Take off the foil, top with some mozzarella cheese and bake for a further 10 minutes
- Serve immediately
