Ingredients:
1 large sweet potato, diced
1/2 can coconut milk
Salt and pepper to season
Method:
- Preheat oven to 180 degrees
- line a baking tray with a large piece of aluminium foil. Add in sweet potato
- Coat in salt and pepper. Pour in coocnut milk, try and cover as much as possible
- Wrap the mixture with the aluminum foil so it is encased
- Bake for 20 minutes or until soft
