2 cups coconut milk
2 large onion -diced
5 cloves garlic
2 sprigs curry leaves
2 pieces pandan leaves
2 small cinnamon stick
1 tablespoon fenugreek seeds
2 teaspoons tumeric powder
Lime zest
chicken thigh – diced
- mix coconut milk and tumeric and set aside
- In a pan, heat up oil and brown chicken until mostly cooked
- remove chicken, add more oil and add onion, garlic, curry leaves, pandan leaves, cinnamon and fenugreek seed. Cook until fragrant
- Stir in coconut milk mixture and let it simmer for 10-15 minutes
- add chicken back in to poach. Serve with rice and roti
