Coconut Curry

2 cups coconut milk
2 large onion -diced
5 cloves garlic
2 sprigs curry leaves
2 pieces pandan leaves
2 small cinnamon stick
1 tablespoon fenugreek seeds
2 teaspoons tumeric powder
Lime zest
chicken thigh – diced

  1. mix coconut milk and tumeric and set aside
  2. In a pan, heat up oil and brown chicken until mostly cooked
  3. remove chicken, add more oil and add onion, garlic, curry leaves, pandan leaves, cinnamon and fenugreek seed. Cook until fragrant
  4. Stir in coconut milk mixture and let it simmer for 10-15 minutes
  5. add chicken back in to poach. Serve with rice and roti
