Ingredients – dough:
3/4 cup milk
2.5 teaspoons yeast
1/4 cup caster sugar
1 egg+1 extra yolk
75g unsalted butter, melted
3 cups bread flour 
3/4 teaspoon salt 
Ingredients – filling: 
1 cup brown sugar
2.25 tablespoons cinnamon
75g unsalted butter, melted
Ingredients – frosting:
100g cream cheese
100g unsalted butter, softened
3/4 cup icing sugar
1 teaspoon vanilla extract
Method:
- Heat up milk in microwave for 45 seconds then add to mixer bowl
 - sprinkle yeast on top (should start to bubble instantly)

 - add in sugar, eggs and butter and mix with a spatula 

 - stir in flour and salt by hand until just combined, then mix in the mixer using dough hook on low setting for 5 minutes


 - Use your hands to kneed into a ball, cover with cling wrap and a towel and allow it to rest for 90 minutes until the dough doubles in size


 - Use your hands to mix brown sugar and cinnamon together. Melt butter in a bowl separately 

 - Roll out the dough and spread melted butter on top

 - evenly spread the cinnamon mix, using your hands to rub it into the butter

 - Roll the dough up tightly, and cut into even size rolls

 - place rolls into a lined/greased baking tray and allow it to rest for 45 minutes and turn on the oven to 175degrees to allow it to preheat. Dough should expand again


 - Bake in the oven for 20-25 minutes until edges are golden

 - In a new mixer bowl, use electric beater to mix all the frosting ingredients together
 - remove rolls from oven, wait 5 minutes before frosting and serve immediately
