Chocolate Muffins

Ingredients:
1 3/4 cups plain flour
1 1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder
3/4 cup milk
1/2 cup olive oil
1 cup brown sugar
2 teaspoons vanilla extract
1 large egg
3/4 cup sour cream
1 1/2 cup dark chocolate chips

Method:

1. Preheat the oven to 210 degrees
2. Sift flour, baking soda and salt in a bowl
3. In a separate bowl, whisk together cocoa powder with HOT milk
4. add sugar, oil, egg, sour cream and vanilla to the cocoa mix. Whisk til combined
5. mix dry ingredients in with a spatula. The batter will be thick and sticky
6. spoon into liners, bake for 5 minutes then reduce the temp to 190 for another 15 mins
