Ingredients:
1-2 punnets strawberries or any fruit you wish to decorate with
600ml thickened cream
1 packet chocolate cake
400g of dark chocolate
Method:
- Prepare chocolate cake as per packet instructions
- Cut the top off the cake and then slice the cake in half. Put the bottom half back in the cake tin
- Whip the cream until stiff peaks form
- Melt the chocolate in a bowl in the microwave – low power and in 30 second intervals
- This step depends on if you want smooth mousse or bits of chocolate chip in it. If you want smooth mousse, make sure the chocolate is still quite warm and running and fold into the cream. If you would like chocolate chip mousse, wait til the chocolate is quite cool and thick. Add all the chocolate at once to the cream THEN fold. It will start solidifying once it touches the cool cream and will create chocolate chips
- Place half the mousse mixture into the cake tin on top of the cake base. Spread it so it is even
- Put the other half of the sponge cake on top of the mousse
- Put the last half of the mousse mixture on top and spread evenly
- Top with strawberries or any toppings you like
- Cover with cling wrap and refrigerate for 5 hours.
