This is the best recipe I’ve found for chocolate chips. They are definitely worth the wait and effort. You do need to use different flours and sugars and you do need to wait before baking the dough but I promise its worth it.
Ingredients
2 cups minus 2 tablespoons plain cake flour
1 ⅔ cups bread flour
1 ¼ teaspoons baking soda
1 ½ teaspoons baking powder
1 ½ teaspoons salt flakes
145grams unsalted butter – softened to room temperature
1 ¼ cups light brown sugar
1 cup plus 2 tablespoons white sugar
2 large eggs
2 teaspoons natural vanilla extract
560 grams dark chocolate chips
Sea salt flakes
Method:
- Sift flours, baking soda, baking powder and salt into a bowl. Set aside.
- Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes.
- Add eggs, one at a time, mixing well after each addition.
- Stir in the vanilla
- Reduce speed to low, add sifted flours and mix until just combined, 5 to 10 seconds
- Using your hands, knead in chocolate chips
- Wrap all the dough tightly in a few layers of cling wrap. Refrigerate for 48 hours before baking
- When ready to bake, preheat oven to 175 degrees
- Roll the dough into balls – golf ball size. Sprinkle lightly with sea salt
- Put in the oven for 18 – 20 minutes until golden brown
